Joey Wells is a global expert on dairy products and its by-products and for PureWow magazine he shared some valuable guidelines for all cheese lovers:
Fresh cheese
“A fresh cheese is pretty easy to spot because this category is made up of young, soft cheeses,” says Wells. According to the expert, they have a lighter and more lactic (milky) flavor. Some examples include feta (soft), ricotta (made from the whey of sheep's, cow's, goat's milk), mascarpone (cream cheese), chevre (goat's cheese), and fresh mozzarella. Try serving this cheese with sweet or fresh produce, such as tomatoes, onions, beans, balsamic vinegar or even watermelon.
Soft cheese
Brie (soft and creamy cheese) and Camembert (unpasteurized milk cheese) are two French cheeses that fall into the category of soft cheeses. You can serve it with a variety of foods, especially fruit, jam and honey.
Semi-soft cheese
