Ingredients for the pizza:
1 cauliflower for the dough
1 and a half tablespoons of basil pesto
1 vegan mozzarella
Some corn
1/2 zucchini, thinly sliced
1 tablespoon of sun-dried tomatoes
3 small marinated artichokes
1/2 cup chopped broccoli
1/2 cup arugula
1 tablespoon of oil
1 teaspoon of lemon juice
Preparation:
Preheat the oven to 200°. Add all the vegetables to a bowl, drizzle lightly with oil and season with salt and pepper.
Arrange the cauliflower crust on a baking sheet and spread the pesto over the crust evenly. Top with vegan cheese and toppings of your choice. Place the pizza in the oven for 10-15 minutes, until it turns golden brown. In a small bowl, mix the arugula with lemon juice and oil to accompany the pizza.

Sprinkle your vegan cheese (or regular, if you’re into it) and then your toppings. 6. Place pizza in the oven for 10 to 15 minutes or until golden brown. 7.
