What should you do?

After boiling the pasta for the usual time, refrigerate overnight. This helps to convert some of the starch in the pasta into resistant starch – a form that is excellent food for the good bacteria in your gut. In addition, resistant starch reduces their impact on blood sugar levels.

To make cooking easier, you can leave the pasta in water overnight. So, the next day, they only require two minutes of boiling to cook.

Why is this a smart choice?
